arm64: defconfig: Enable STM32 Octo Memory Manager and OcstoSPI driver

Enable STM32 OctoSPI driver.
Enable STM32 Octo Memory Manager (OMM) driver which is needed
for OSPI usage on STM32MP257F-EV1 board.
